Everyone loves brownies. That's just a fact of life... And if you don't, then you're either lying to yourself or you're not human. However, it's no surprise that brownies aren't exactly healthy by any means. In fact, they're right on the opposite side of the spectrum. Most traditional brownie recipes are loaded with things like sugar, chocolate and more sugar.
Thus, I was inspired to create my own raw brownie bites that are significantly healthier than traditional brownies. This means that you can snack on them throughout the day or have them as a guilt-free dessert. They're also extremely easy to make and require absolutely no baking. Just mix a few ingredients together and chuck it in the fridge to set. In fact, it will only take you 10 minutes to prepare. They really are that easy.

After trying some other raw brownie bites recipes that were floating around on the web, I found a common theme: they were all too soft. I personally don't really enjoy the feeling of eating healthy brownie batter that's rolled into a soft ball. I wanted to create something different. Something slightly more firm that more closely resembled the consistency of a traditional brownie, as opposed to brownie batter.
I personally believe that I've done a pretty darn good job at meeting that criteria; and if you look at the photo above, you can physically see that my raw brownie bites recipe has a little more structural rigidity and firmness than most other recipes out there. But alas, don't be alarmed. I didn't forget about the taste.
These raw brownie bites taste phenomenal for a healthy treat. With a strong dark chocolatey kick, these little bites are sure to curb most people's chocolate cravings. Although this recipe uses dark chocolate, you'll find that the brownie bites don't taste too bitter. It's got a great balance of sweetness that I know you'll love.
As already mentioned, most traditional brownie recipes aren't exactly healthy. I've made some healthy ingredient swaps that allowed me to stay away from ingredients like all-purpose flour, processed sugar, vegetable oil and more. For example, I used cacao powder and dark chocolate instead of milk chocolate to give it that chocolatey taste; rice malt syrup and medjool dates instead of sugar; as well as almond meal, oats and desiccated coconut instead of flour.
The result? A raw, healthy treat that tastes amazing!
I'd recommend using either use a blender or a food processor for this recipe to combine all the ingredients.
If you prefer these raw brownie bites to be a little more firm, you can also store them in the freezer. Just be sure to wait a couple of minutes after taking them out of the freezer before eating.... otherwise it'll be like eating a rock.
If you don't have rice malt syrup, then you can also use any other sweetener that you have e.g. honey.
