Easy One Tray Chicken Fajitas
Serves 4
Ingredients
- 500g Chicken Breast, Sliced
- 2 Capsicums, sliced
- 1 Red Onion, sliced
- Fajita Spice Mix
- 1 Can Black Beans, drained and rinsed
- 1 Avocado, mashed
- Lettuce, chopped
- Tortillas
Method
- Preheat the oven to 180 degrees C. Line a baking tray with alfoil or baking paper.
- Add the sliced chicken, capsicum and onion to the baking tray. Sprinkle over the seasoning and toss until everything is coated.
- Add the chicken mixture to the oven and cook for 20-25 minutes or until the chicken is cooked through. Add the black beans to the tray and toss.
- Place a tortilla on a plate. Top with lettuce, chicken mix and avocado. Enjoy.
