Bonus Recipe- Peanut Butter Skillet Cookies!
As an extra sign up bonus, here is my recipe for a health(ier) peanut butter skillet cookies. These aren't exactly the healthiest option, but hey, I'm all about creating that 80/20 diet that allows you to treat yourself 20% of the time..... Plus, there are much more unhealthy options out there than this.
Ingredients:
PB Skillet Cookie Ingredients:
- 2 cups almond meal
- 2 tsp baking powder
- 1 tsp vanilla essence
- 1 egg, beaten
- 3 tbsp @begapeanutbutter (crunchiest works best for this recipe)
- 1/2 cup maple syrup or rice malt syrup
- 1 tbsp nuttelex melted
- 1/2 cup choc chips
PB Banana Nice Cream Ingredients:
- 500g frozen banana
- 3 soft Medjool dates
- 1/2 cup @begapeanutbutter
- 1/2 cup almond milk
- 1/4 cup peanuts (optional but adds extra crunch to the nice cream)
Method:
PB Skillet Cookie Method
- Mix all ingredients together in a bowl
- Press down into a greased skillet and bake for 15mins at 180 degrees Celsius
PB Banana Nice Cream Method
- Add all ingredients (except peanuts) into a food processor
- Process until thick and smooth like ice cream
- Stir through peanuts
- Transfer to a container and place in the fridge to set
Eat both on their own or put the nice cream on top of your giant skillet cookie. Enjoy!
