Overview


These could very well be the world's most tasty sweet potato and feta rolls recipe. They're relatively straight forward to make and you'll absolutely love them. You'll especially find these rolls delicious if you enjoy sweet potato.


You won't need any fancy equipment for this one, but nevertheless, I would rate the difficult of making these as 'medium.' They're not necessarily difficult to make, but they do take quite a while; so make sure you free up around 60-90 minutes.


As a nutritionist and passionate foodie, I've tested quite a few sweet potato and feta roll recipes that I've found online. However, they all seemed to be lacking something, and only a few of them could be considered 'healthy.' I'm happy to announce, that after multiple tests, and more time than I care to admit, I finally believe that I've found the perfect balance of taste and health.


That's right. These sweet potato and feta rolls are both delicious and nutritious.



Perfect For Sharing And Snacking


These little critters are always an absolute hit at social events and functions; especially if you're catering for a vegetarian. I've found that people are always keen to try new interesting sounding foods, and these sweet potato and feta rolls definitely have that intrigue factor.


You can make them as small, or as large as you wish, which means that they can also be cut up into smaller pieces, placed in the fridge and eaten as a snack throughout the week.



Taste & Consistency


These sweet potato and feta rolls are an absolute taste bud sensation. I designed this recipe so that the rolls don't have an overpowering feta taste. Instead, the feta serves as a 'secondary' flavour which serves to further enhance the amazing taste of sweet potato.

Ingredients



Method


  1. Preheat oven to 220 Degrees Celsius and line a baking tray with parchment paper
  2. Whisk the egg and set aside for later
  3. Peel and cut sweet potato into cubes, spread out evenly on the baking tray
  4. Peel and roughly chop the onion. Spread out evenly on the baking tray
  5. Lightly coat onion and potato with olive oil and sprinkle with salt and pepper
  6. Bake for 30 minutes until soft
  7. Once baked, either mash or blitz in a food processer the sweet potato, onion, feta, rosemary, lemon rind, garlic salt and pepper
  8. Cut puff pastry in half, and evenly divide the mixture amongst the pastry
  9. Roll the pastry over the mixture (use some of the whisked egg to stick the pastry together), cut into 4 rolls per pastry
  10. Brush the whisked egg over the outside of the rolls (all over the top, sides and bottom)
  11. Sprinkle with sesame seeds
  12. Bake for 15 minutes, or until golden
  13. Enjoy!




Hot Tips & Conclusion


If you're game, you can also make the puff pastry yourself, instead of purchasing sheets from the supermarket. However, doing so will add a fair bit of extra time onto your prep and cooking time.
