Okay, let's not beat around the bush here. This is one of the tastiest healthy vegan desserts you will ever have the pleasure of acquainting yourself with. The fact that you're on this page right now is like winning the food lottery. Once you taste this caramel tart, every other healthy vegan dessert will pale in comparison... In fact, I'm going to give you a warning: If you taste this vegan caramel tart, all food you try from here on in just won't taste the same.
Obviously I'm just kidding, but honestly, for a healthy dessert, this is game changing.
As I already mentioned, this tart is 100% vegan. You may be scratching your head at this statement after seeing the caramel tart covered in chocolate in the image above. However, this recipe uses dark chocolate that's actually dairy free. To ensure the dark chocolate you buy is vegan, look for high quality chocolate with a cacao content of 50% or more. For this recipe, I used 70% cacao chocolate, but you should be fine with anything over 50%.
Now, to be honest, I wouldn't exactly call this recipe 'healthy'; Because if you're comparing it to something like a salad, it's hard to consider it healthy. However, as far as desserts go, this is an extremely healthy option. With no added sugar or sweeteners, this tart is a hell of a lot better for you than a vast majority of other desserts out there.
Despite this vegan caramel tart's 'health factor', it's still an absolute taste bud sensation. Don't let the 'no added sugar or sweeteners' throw you off, because this tart is still 'sweet' enough to curb most people's sugar cravings. Granted, it's a slightly different kind of 'sweet' than a sugar filled dessert; but nevertheless, I'd still consider it sweet.
Furthermore, its consistency and texture is where this healthy dessert truly shines. Each of its 3 layers delivers it's own unique characteristics. The chocolate layer on top is as hard and crunchy as you'd expect it to be; whilst the base at the bottom is rather chewy with a medium softness. But the real hero of the story is the caramel filling in the middle, which delivers a smooth and soft consistency that really compliments the other two layers well.
Overall, if you're someone who's used to eating healthy vegan desserts, you're going to absolutely adore this vegan caramel tart.
When cutting the vegan caramel tart to serve, first warm your knife in boiling (or hot) water. This is important, as doing so will stop the top layer of chocolate 'cracking' as you're trying to press down on it. Instead, if the knife blade is hot, it should cut right through the chocolate like butter, without cracking the top layer.
